Maybe I was wrong about the parameters for the touch command, sorry if I was wrong here - the manpage is a bit unclear about this:

$ man touch
      ...
       -m     change only the modification time
      ...
      --time=WORD
              change the specified time: WORD is access, atime, or use: equiv‐
              alent to -a WORD is modify or mtime: equivalent to -m
      ...

Can you give it another shot and do this?

• run find . -exec touch -m {} \;
• make a backup

Seems to be a general problem with zip files, they don’t support years earlier than 1980:
